Lake Meadows Farms

This past weekend I went with my friend Tiffany to an organic farm in Ocoee, FL called Lake Meadows Naturals. My dream is to someday have a farm just like this one, only in the Pacific Northwest. Dale is the owner and farmer of the organic operation and was very willing to give us a tour and answer all of our questions. We wanted to collect fresh eggs from the henhouse and we got to. What a great sight to see happy Rhode Island Reds raised in a natural environment, unlike commercial farmed chickens that are sick, broken and diseased. The birds liked to be picked up and pet and followed us throughout the henhouse clucking and cooing. The farm gathers over 4000 eggs a day! It was also a delight to see chicks that we less than a day old, along with guinea hens (which eat ticks and bugs in the fields) pheasants and weeks old chicks. So cute!

The farm also raises sheep, goats, cows, donkeys, turkeys and organic produce. It has an awesome mom and pop shop to purchase fresh honey, cheeses, meats, jams, fruits, veggies, breads and more! I picked up rainbow carrots, fresh pepato cheese, mulberries, snap peas and rhubard jam. Delicious!

It was a great way to spend a Saturday afternoon, and I will definitely be going back for fresh eggs and produce and to SUPPORT LOCAL!!


Sausage and Kale Stuffed Squash

1 Acorn Squash or 2 smaller ones
1/2 lb. fresh chicken sausage
1/2 medium onion chopped
1/2 large green apple, chopped
2 handfuls fresh chopped kale
1/4 cup pecans
1 egg
2 tablespoons almond milk

Slice the squash lengthwise and scoop out the seeds. Place the squast in a microwave safe dish, cover with plastic wrap and nuke for 10 mins. (Normally I hate microwaves and refuse to use them, but I was hungry)

In the meantime, cook the sausage over medium heat until halfway cooked and toss the onions in. I like to add a little garlic at this time. Cook a few more minutes. When this sausage is done, throw in the apples and kale.

In a large bowl, beat the egg with the milk and add the pecans and sausage mixture.

Place the cooked squash, hollow side up on a foil lined baking sheet. Stuff the mixture in each squash and bake at 400 degrees for 20 minutes.


New Start Day 2

Life happened yesterday and I forgot to blog. Nothing major, I was at work, selling snowboards until 11:45pm.

I slept an alarming 8! hours! Refreshed and revived I walked 3.31 miles in 49:55, a 15:04 min/mile and burned 385 calories.  Tucker, my faithful black lab and walking partner is getting in shape as well. He is almost 9 years old, but you would never know it, he’s youthful, playful and still a troublemaker.

Before I eat, I take all of my Isontonix supplements: OPC-3, multi-vitamin with iron, calcium plus vitamin D, and activated B-complex (for more information, contact me!)

Food for the day:

Breakfast: Egg fritata (2 farm raised, hormone free eggs, spoonful of Daisy cottage cheese, red/green peppers, onions and spinach, dijon mustard, salt and pepper)

Snack: 2 avocado, honey and carrot muffins (little butter to mellow out the avocado)

Lunch: Turkey burger, sauteed mushrooms, with a little butter (good fat) cheddar cheese, jalapenos, chives in lettuce wraps, peas and broccoli.

Snack: Daisy cottage cheese (only 8 indgredients while others have chemicals and way more!) natural blueberry jam, no sugar added.

Dinner: Salad with 2 hard boiled eggs, sauteed mushrooms, toms, chives, peas, with balsamic vinegar for dressing.

Had a few beers with the guys after work…..


Isotonix supplements

Breakfast: Smoothie of avocado, kale, spinach, banana, almond milk and ice. YUM!!

Snack: handful of pistachios

Lunch: GASP!! NACHOS! Homemade, chips, ground turkey, cheese, chives, jalapenos, salsa and sour cream, Coors light.

Dinner: Chicken sausage and kale stuffed acorn squash. 1/2 a sugar cookie (it left a film on my teeth and tasted TERRIBLE!!) glass of wine.

Took my naughty lab for 5.12 miles, 1:20:03 time, 15:37 min/mile and burned 575 calories. Tucker decided to take off and go swimming in the nearest leech and gator infested mudhole to cool off. Dumb dog. It took me 5 minutes of swearing and making an ass of myself to get him out of the gross pond. He was pretty proud of himself. Yuck. He smells. Bathtime in the morning!


Try again, NEW START!

Well, my 12 week TLS weight loss didn’t goes as I planned…my fault, my bad. Only 5 inches melted away along with 1% body fat, 9 pounds while maintaining 45% hydration. It would have been nice to see bigger numbers but I like to drink wine and go out for lunch, dinner or whenever and I thought that I could drop weight just by adding in new, healthy fruits and veggies and lean meats and by simply…walking. It didn’t. Each week I walked 16-25 miles in hot, humid Florida and I thought for sure the weight would come off. It didn’t. New foods were added to my already healthy diet like kale, cabbage, purple cabbage, jicama, lots of avocados, bananas, sweet potatoes, broccoli, spinach, peas, onions and bright peppers and I thought the weight would come off. It didn’t. I tried so many new recipes and shared with friends, omitting ‘bad’ foods and ‘bad’ oils and hoped the weight would come off. It didn’t. Then I came to my senses, let’s say…mmm, yesterday that I eat refined sugar. AUGH!!! GASP!!! NO, NOT ME!!? NOT A HEALTH COACH!!? WHAT?!?

For so long I have convinced myself and others that I don’t crave sugar, sweets, tasty drinks, wine, beer, carbohydrates, BUT I DO!!! I REALLY, REALLY DO!! Oh, THE SHAME!!

Well, I am going to pick up my sad, sappy ass and get back on that damn horse and try again. I have 12 weeks left in FL before I move home to UT and my goal is an easy 15lbs. I’m going to keep track of everything that goes into my mouth and log the miles I walk along with calories burned. The sugar will not, I repeat, WILL NOT, WIN!! (Not giving up my wine though….) I will hold myself accountable each and everyday on this blog site and I WILL LOSE THAT PESKY 15lbs!!



Detox week…a GREAT success!!

Wow! I made it through a whole week of eating fruits and veggies (funny, it was a lot easier to do when I was eating a vegan/veggie diet!) Not gonna lie….I cheated,  but only a teeny bit. By Thursday I was feeling a little faint and was horribly famished so I stopped into my favorite local cafe for a salad.  My friend Tiffany owns and runs the joint and knew exactly what I needed to eat get me through the rest of the day. She made the tastiest roasted veggie medley with chicken on a plate of greens with spinach and arugula. That salad didn’t stand a chance!! I almost licked the plate, yes, it was that good!  Before work on Saturday, I had stopped at Whole Foods for lunch and picked up roasted veggies, garlic, a salad, blueberries and strawberries, and wine. My bad. When I got into work, all of the guys were enjoying work beers (yes, that happens!) Ridiculed and peer pressured, I gave in and had 2 glasses of cabernet.  Not gonna lie…it tasted so good! By today I was through. For breakfast I induldged in an avocado/banana/spinach/blue & strawberry/almond milk smoothie. For a week I had been without good fats and protein.  For lunch I plugged my nose, shut my eyes and ate the last of the soup I had been consumming for a week. What I didn’t finish, I gave it a funeral and shoved it down the garbage disposal. Good riddance vegetable soup. Buy hey….IT WORKED!! I LOST 9LBS IN ONE WEEK!

This week I am adding in lean protein, low glycemic carbs, good fats and sticking with the fruits and veggies. I have a goal weight in mind and at the rate I am going and with the right will power…I GOT THIS! I CAN DO IT and SO CAN YOU!!



Detox Week!!

It’s DETOX WEEK!!! It’s well needed for me after spending a glutunous week in Park City and a great way for me to lose the 25lbs I have gained from draining my adrenal glands and developing hypothyroidsm.

For the next 12 weeks I will be taking a weight loss class. This is week one. My current weight is off the hook at 176!! Yuck! My goal weight by the end of the 12 week program is 136. Yes, 30lbs! Oh yeah, I got this! I can do it and so can you!

It’s a week long detox which purifies the liver and improves the health of your heart. By eating fruits and veggies, you are reducing the acid levels in your body which causes inflammation and increases all types of diseases for your heart. It invovles 3 servings of fruit daily, no more than that, the sugar takes longer to digest and we are trying to quickly rid the body of toxins. Eat as much raw veggies as you like. Sauteed, broiled or steamed is fine just don’t overcook. I made a spaghetti squash with Muir Glen pasta sauce and added zucchini, shrooms, onions, gr peppers, yellow squash and anything else I could find. Been eating it now for 3 days and can’t eat anymore of that haha! You want to stay away from oils, sugar, caffiene, and carbonation. If you are addicted to caffiene, drink green tea. For breakfast have hot water with lemon, it helps the digestive acid to get going and ready for the day. Drink at least 8-8oz glasses of pure water. This detox is to help curb sugar addictions and get your body to crave the good stuff like fruits and veggies.

Remember…it’s only for a week and you will feel great after! (After 3 days, I feel amazing and have lost 6lbs of crappy bloat!!)

I’m debating about posting a before and after photo (it’s a little awkward and terrifying to expose my flaws to the world!) You decide. Yes or no?

Park City Good Eats

Epic blog fail while in Park City! I guess I was having way to much fun, hanging out with good people, snowboarding, eating great food and of course, indulging in a few cocktails!

My friend is the book-keeper for this fine establishment so we dine here frequently. It’s soooo yummy!!

Wagyu Beef Hot Rock – Australian-raised wagyu beef strip loin and ponzu butter dipping sauce

Dim Sum- Chef’s nightly creation

Firecracker Shrimp- tempura rock shrimp, creamy-spicy sauce, tobiko, and green onion

Shabu Sizzle Pan – choice of grilled chicken, beef or shrimp, with vegetables and house-made teriyaki sauce


Whiskey Chicken

Boneless chicken breast sautéed with onion, garlic and fresh thyme in an Irish whiskey cream sauce, Boxty style.


Dead Man’s Boots: Named after the boots of one of our former patrons. This mixture of Double Rye Whiskey and tequila comes together with fresh lime and ginger beer.

The food here is unbelievable.


TATCHOS!! (Best bad for me food that I have ever eaten, EVER!!) tater tots and loaded with bacon infused smoked mozzarella cheese. Go for the works and add our Buffalo or Vegetarian Chili!
